Apple Mojito

This was taken from The Saturday Times – ‘Make mine a mojito, but hold the Rum.’ (I have added rum!!!)
Apple Mojito
25ml fresh lime juice
100 ml pressed apple juice
8-10 mint leaves
Dash Angostura bitters
50 ml soda water/lemonade
Rum (if you please!)
Muddle the mint & sugar to release the oils from the mint. Should you wish to add the Rum. Then add the lime and apple juice and stir on ice to mix. Top with the soda or memonade and add a dash of Angostura bitters.. Garnish with a sprig of mint and a wedge of lime.
